Month Of Chocolate – Raspberry & Chocolate Trifle
Everyone loves an easy dessert. One that is quick to make but looks and tastes like you have taken forever to make. This is a cheat’s chocolate and fresh raspberry trifle with no cooking or baking involved.
2 double chocolate chip muffins
200g of dark chocolate
Punnet of raspberries
Raspberry jam
250g Mascarpone Cheese
400g tinned custard
275ml double cream
Cut the muffins in half and spread raspberry jam on them.
Sandwich back together and cut up in to small pieces. Place in a glass trifle dish.
Sprinkle over the raspberries. Keep a few back to decorate the top.
Break up dark chocolate and melt all apart from 1 chunk. Whilst the chocolate is melting, mix together the mascarpone and custard until smooth.
Add the melted chocolate after allowing to cool for a few minutes and mix well.
Place the chocolate custard on the top of the trifle base.
Whip the cream and add to the top of the trifle.
Grate chocolate on top and add raspberries to decorate.
These are individual dishes and this recipe made 4. However, none of us managed to eat more than 1/3 of the trifle. It is very rich and because of this you really can’t eat much. Truly delicious and certainly a case of eyes bigger than your belly.
